Cold Weather Recipes

It's beginning to get chilly down here in Texas - of course we think 60 degrees is cold, so that says it all. It's been very dreary out today, so I have a hankering for chili and cornbread. That's what I'm going to cook tonight. In one of my recent Cooking Light issues, there was a two bean and beef chili recipe that looked really yummy. I think I'm going to leave the jalepeno out, though - it's not that cold outside! :)

Another one of my favorites is "taco soup" - it's essentially a bunch of cans of vegetables (corn, two kinds of beans, tomatoes), onions, some very lean ground beef or ground turkey, and seasonings. I grew up with my mom making this, and I couldn't resist tasting samples from the big pot as it simmered. It's delicious with a bit of cheese, a few tortilla chips crumbled over top, and a dollop of low-fat sour cream. My husbands can literally eat it for days.

For any vegetarians out there, I've also made a Moroccan Chickpea Chili from Cooking Light that was delcious. For any ethnic-food lovers it's a must-try!

  1. In your taco soup do you use a taco seasoning packet and an dry italian dressing packet?

    i have used taco seasoning in the past, but i found a recipe the other day that had all the seasonings but none of the salt (or very little, i should say).

    i've never tried the dry italian dressing packet - sounds interesting, though!
